There is a known issue where notes titles can disappear and become uneditable in certain views. This will be fixed with the release of 5.84.

In the meantime there are a couple of workarounds:

Navigate to your notes using the All Notes option rather than Projects or Tags filters.

If you still want to navigate using Projects and Tags, then you can rotate the device to landscape mode and view/edit the title that way.
